BBC News have announced that Sunday is likely to be the hottest day yet - that’s right - the hot weather alert has escalated to amber! This means that a range of people could be affected, of all ages. Make sure you are prepared for Sunday!
We wanted to take the opportunity to write a bit about how to make Indian Ice Lollies - or better known as Kulfi Ice Lollies! A perfect activity to do with young kids.
Let us know if you try it! All you need are:
2 cups whole milk
1 cup condensed milk
1/2 cup heavy cream
1/4 cup chopped nuts (such as almonds, pistachios, or cashews)
1/4 teaspoon cardamom powder
1 tablespoon rose water (optional)
Ice lolly molds or small disposable cups
Ice lolly sticks
Step by Step Instructions:
In a heavy-bottomed saucepan, pour the whole milk and bring it to a gentle boil over medium heat. Stir occasionally to prevent it from sticking to the bottom of the pan.
Once the milk comes to a boil, reduce the heat to low and let it simmer for about 15-20 minutes. Stir occasionally to avoid forming a skin on top.
Add the condensed milk and heavy cream to the saucepan. Stir well to combine all the ingredients.
Continue to cook the mixture on low heat for another 10-15 minutes, stirring frequently to prevent burning. The mixture will thicken and reduce in volume.
Add the chopped nuts, cardamom powder, and rose water (if using) to the mixture. Stir well to evenly distribute the ingredients.
Remove the saucepan from the heat and let the mixture cool down to room temperature.
Once the mixture has cooled, pour it into ice lolly molds or small disposable cups.
If using ice lolly molds, insert the ice lolly sticks into the molds.
Place the molds in the freezer and let them freeze for at least 6 hours or overnight until firm.
Once the kulfi is completely frozen, remove the molds from the freezer.
